From the raw material, Hazel PGI Piedmont. Using mechanical Shucking, you separate the shell from the fruit which is then calibrated and subjected to heat source. This allows the epidermis (skin) of the fruit to break away while maintaining the organoleptic characteristics and enhancing fragrance and aromas.
